The Windows installer ships signed, and every build is produced in the open on GitHub. You can read the source and compile it yourself from the repository if you'd rather.
Macs from 2020 onward with an M-series chip use the Apple Silicon build. Older Intel Macs use the Intel build. If you're unsure, open About This Mac from the Apple menu; anything listing an Apple M chip takes the Apple Silicon build.
